Balsamic Berry Eton Mess

To celebrate this spring season we want to inspire you with tasty and healthy recipes.

This week we have created a delicious  dessert Balsamic Berry Eton Mess!

Shopping List:

Serve 4

For berry mix:

  • ½ punnet  Strawberries, quartered (The Fresh Fruit World)
  • ½ punnet Blueberries (The Fresh Fruit World)
  • 1 tbsp. Caster sugar (Saccas Fine Food)
  • 1 tbsp. Balsamic vinegar (Saccas Fine Food)

For cream mixture:

  • 200g  Double cream (Saccas Fine Food)
  • 150g  Greek yogurt (Saccas Fine Food)
  • 100g   Coconut yogurt (Go Vita)
  • ¼ tspn. Lemon zest, finely chopped (The Fresh Fruit World)
  •  Vanilla bean, deseeded (Saccas Fine Food)
  • Dark chocolate to serve. (World of Nuts and Coffee )
  •  Store bought or homemade meringue (Yves Bakery)

For berries:

Add balsamic vinegar and sugar to berries and mix well. Set aside for 15 minutes.

For cream mixture:

Combine cream, yogurt, vanilla and lemon zest and mix thoroughly. Crumble meringues and set aside.

To serve:

Layer cream mixture, followed by berries and meringue, repeat. Top with any syrup that remains from the berry mix. Top with grated chocolate.
