Chilli Con Carne

Serves 4

Ingredients

  • 500g normal mince steak
  • 2 chopped bacon rashers
  • 2 finely chopped onions
  • 2 crushed cloves of garlic
  • 2 sticks chopped celery
  • 2 tablespoons plain flour
  • 1 teaspoon chilli powder
  • 400g can tomatoes
  • 415g can tomato puree
  • 1/3 cup tomato paste
  • 2 bay leaves
  • 2 cups beef stock
  • 440g can drained kidney beans in tomato sauce
  • 440g can baked beans in tomato sauce
  • 310g can drained cannelleni style beans (white beans)
  • 1 chopped green capsicum

Method

  1. Add mince to a large pan and stir over high heat until browned.

  2. Drain fat and remove mince from pan.

  3. Add bacon, fry until crisp and remove from pan.

  4. Add onion, garlic and celery to bacon fat in pan and cook stirring until onions are tender.

  5. Return mince and bacon to pan stirring in flour, chilli powder, undrained crushed tomatoes then add remaining ingredients except capsicum.

  6. Cook uncovered for 30 minutes.

  7. Add capsicum and cook a further 10 minutes.

  8. Add capsicum and cook a further 10 minutes.
