Easy Peasie Omelettes

Serves 4


  • 8 large eggs
  • 2tbs chopped chives
  • Salt and pepper
  • 3 slices of ham chopped into 1cm squares
  • 2 teaspoons butter
  • 2 tomatoes, chopped
  • 8 mushrooms
  • 1/2 cup freshly grated parmesan cheese


  1. For each omelette, whisk 2 eggs, a bit of salt and pepper and a sprinkle of chives in a small bowl.

  2. Heat the fry pan to medium heat, melt teaspoon of butter in the fry pan until it starts to foam and pour in eggs.

  3. Leave the eggs for about

    a minute until the base

    has set, then sprinkle ham,

    tomato, mushrooms and

    parmesan in a line across.

  4. Use a spatula to carefully fold one side of the omelette over the filling.

  5. Then gently push the spatula under the middle of the omelette, while tilting the pan a bit and use the spatula to help slide the omelette on to a plate.

  6. Then fold the other side of the omelette into the middle so that it looks like a wrap.
